A byproduct of the salt making process, all natural nigari is the liquid that remains after the salt harvest. It is rich in minerals such as magnesium, calcium, and potassium and is most commonly used to make tofu but can also be used to make fresh cheeses, such as ricotta. JQ Dickinson is a seventh generation family owned salt mining company.  The family's 200-year-old farm is located in the majestic Appalachian mountains of West Virginia, where they harvest a rare salt from an ancient aquifer.
